1/3CupFinely Grated Parmesan Cheese
1TspGarlic Powder
1/2TspBlack Pepper
1TblFinely Grated Lemon Zest
1TspDried Parsley, Optional
Method
Preheat the oven to 275°F. Line a large rimmed baking sheet with parchment paper. Add the pretzel snaps, garlic rye chips, roasted almonds, and sesame sticks to a large mixing bowl.
In a small bowl, whisk together the melted butter, olive brine, grated Parmesan, garlic powder, black pepper, lemon zest, and dried parsley. Pour the coating over the snack mixture. Gently toss until the pieces are evenly coated.
Spread the mixture in an even layer across the prepared baking sheet. Bake for 25 to 30 minutes, gently stirring once halfway through, until the mixture is dry, lightly toasted, and fragrant.
Let the mixture cool on the baking sheet for about 10 minutes. Gently fold in the Parmesan crisps and crispy fried onions. Let the finished snack mix cool completely before serving or storing.
Storage
Store the completely cooled snack mix in an airtight container at room temperature for up to 5 days. Do not seal it while it is still warm, or trapped moisture may soften the mix.
Notes
Measure the olive brine carefully. More is not better—it can make the mix soggy and overly salty.
Add the Parmesan crisps and fried onions after baking so they stay crisp and do not become too dark.
Taste the roasted almonds and Parmesan before adding extra salt. Most of the ingredients are already salty.
For a stronger lemon flavor, add another small pinch of fresh lemon zest after the mix has cooled.
